Easy Chicken Crock Pot Meal for Your Busy Family!

I threw together an easy chicken crock pot meal a few weeks ago. It was a huge hit with my family! They have requested it again. My husband loved this recipe and asked for it to go into the rotation. It tastes yummy, and it’s so easy!

I thought I would share it with you, even though I haven’t shared recipes before. It’s easy and pretty healthy, if you don’t mind a can of cream of chicken soup. I suppose you could make that part yourself. We don’t mind a can of something here and there, since we eat pretty healthy most of the time.

This is one of those easy recipes you can quickly throw into the slow cooker in the morning, and come home to a home cooked meal at the end of a busy day. I know, if you are like me, your days are full of running kids to appointments, and possibly a job (or two) and you love anything that makes your life easier! This is one of those recipes that does that!

I’m sorry I don’t have a picture for you guys! I never seem to think of it while I am cooking, but I will try to remember next time I make it and add it to the blog post. Maybe I’ll be really organized and make a video! Well, a girl can dream, right?! LOL

Anyway, let’s get to it! Here’s my recipe for my easy chicken crockpot meal!

Easy Chicken Crock Pot Meal


  • 5 lbs. Chicken thighs
  • ½ head of cauliflower, chopped
  • 2 heads of broccoli, chopped
  • 1 can of cream of chicken soup
  • ½ soup can of water


  1. Cover the bottom of the crock pot with the uncooked chicken thighs. Sprinkle with salt and seasoning.
  2. Cover the chicken with the vegetables.
  3. Pour the soup over the vegetables.
  4. Pour the water into the crockpot.
  5. Cook on high for 4-5 hours or on low for 8-10 hours.
  6. Serve over rice.

Helpful Tips for Making the Easy Chicken Crock Pot Meal

This recipe is simple, and you probably don’t really need a lot of tips to make this for your family. I used fresh broccoli and cauliflower. It only takes maybe 10 minutes to chop them up and put them in the crock pot with the chicken thighs. However, if you are really in a hurry, just grab a couple of the pre-chopped vegetables in the produce section.

My husband and I buy our rice in bulk from Amazon. We have it on subscription, and it shows up at our door once every four months. It’s great! Right before we run out of one bag, the new bag appears. We don’t even have to think about it.

We have quite a few things set up on subscription this way. It’s great for anything you use regularly, like toilet paper, paper towels, dish detergent or… rice!

This rice is very tasty! It has a chewy texture and nutty flavor that we like a lot. It’s non-GMO and grown in California.

If you don’t have a rice cooker, I highly recommend you add it to your kitchen tools! We use ours almost every night. You just wash the rice and put it in the cooker with water, and turn it on. Then you can forget it. An alarm sounds to let you know your rice is ready. It’s always perfectly cooked and you never have to think about it!
